1 English cucumber
¼ cup unseasoned rice vinegar
1 tsp sesame oil
1 tsp honey
½ tsp kosher salt
1 tbsp toasted black and white sesame seeds
- Using a knife, slicer on a food processor or mandolin, slice the cucumber into 3mm slices. Place slices in a medium size mixing bowl.
- Drizzle the vinegar and oil over the cucumbers. Sprinkle with the honey and salt, mix and toss together very well. Sprinkle with sesame seeds, toss. Let marinate at room temperature for about 30 minutes, or longer, before serving. Toss again before serving.
